I take 1000mg twice a day. I have been fine. no side effects at all.
I did build up slowly, and always take AFTER breakfast and BEFORE my evening me, if I do it the other way around I go get a tummy upset so I found my way of taking it

I'm on Metformin. 1 500mg tablet 3 times a day (breakfast, lunch, dinner).
I started on one tablet a day and worked up to my current dosage.
The first few months I had terrible diarrhoea when I ate anything if I also took Metformin. BUT this has gone almost completely. In the early days if I forgot a dosage when I started up again it would increase the stomach cramps and diarrhoea but now even if I miss for a few days when I can't get my repeat scrip in time I only have mild stomach upset. If I miss for longer though (like recently when I was on holiday and my luggage was lost) the symptoms do come back when I start up again but they're not as bad as when I first started.
Still...I feel it's worth it. I'm definitely healthier now. I feel so much better...it was such a weight off my mind when I first read about Metformin in the big PCOS book back in 2006.
